Palm Springs on the Cap

The Beach Hotel was reimagined by the architect Bernard Dubois as a nod to the clean, geometric houses of Palm Springs and to the old villas of the Mediterranean. White render, deep shade, stone floors that run from terrace to room – it is a hotel designed around light and the sea, set between Port Gallice and the Port du Crouton on the west side of the Cap.

Rooms like a house

There are just 35 rooms and suites, the smallest from 30 square metres. Some open onto a private garden, others sit upstairs with a terrace and a view. Bathrooms are wide and daylit, finished in pink marble, and built-in banquettes turn each room into a small salon.

Two tables

Les Pêcheurs, the hotel's Michelin-starred restaurant, has been a local institution since the 1940s. Chef Nicolas Rondelli writes the menu around what the fishing boat brings back each morning, and the room – mahogany walls, a rust-coloured marble floor pushed out over the water – feels like the aft deck of an old yacht. It opens for dinner only.

By day there is BABA, an open-air restaurant and bar run with chef Assaf Granit, whose Mediterranean cooking takes its cue from Jerusalem, around a circular bar on the beach.
